eggplants are good things to dream about, really!

I've been coming across eggplant hate lately. Whenever people pick a vegetable as an example of something they dislike, eggplant shows up a lot. I adore eggplants, and don't understand the specific hate. So please tell me...

Please share any favorite recipes, eggplant lovers! (I hope there are eggplant lovers out there...) There are such lovely eggplants in the markets right now.

I used to hate vegetales, and it was actually because of egg plants that I started eating them. I guess it's because grilled eggplant is always part of the menu when we have barbecue, so it's the first vegetable that I liked! ^_^

About the recipe... I love the way my late grandma used to make it. Just cut them up crosswise into thin slices (slightly diagonally if you want to make the diameter bigger). Or even lenthwise is fine too, doesn't really matter. All she did was dip it in soy sauce then pan fry it with olive oil. :D

Ohhh... I haven't tried it with ginger before. Sounds interesting. How do I add the ginger ?Is there something else I need? :D
