Big news of the week is that Biblos has declared bankruptcy. I'm not feeling much of a reaction other than irritation that we won't get steady installments of Viewfinder for now...Just as it's gotten reallly interesting. *sighs* Not to mention other stuff I love like Haru and Sex Pistols. And I have to wonder how it's going to affect back stock. Will things become less available? I'm glad Chara didn't go under. Then you'd hear me screaming because a good portion of my trashy BL novels are from that label. ^^;
Today's By Request column in the newspaper featured inari sushi using tofu instead of rice. It sounds kind of hinky but kind of interesting...I love inari sushi because it's simple and hearty (as long as the rice isn't flavored too sweetly). The recipe below:

Inari Tuna-Tofu
16 inarizushi (cone sushi) wrappers
Filling:
1 20-ounce block firm tofu
1 6-ounce can tuna, well drained
1/4 cup minced green onion
3 dried shiitake mushrooms, soaked, drained and minced
4 dried shrimp, soaked, drained and minced
1 egg
Salt and pepper, to taste
1 cup brown rice, optional
To make filling: Remove water from tofu by wringing in cheesecloth. Place in a mixing bowl and add remaining ingredients; mix well. Divide into 16 patties that will fit in sushi wrapper. (If using rice you will get more than 16).
Spray a skillet with cooking oil spray and sauté over medium heat until each side is brown. Cool slightly.
Squeeze sushi wrappers to remove all liquid. Place a patty inside each one.
